Crappie Provencal

Ingredients:

  • Fresh crappie fillets
  • Plum tomatoes, diced
  • Red Onions, diced
  • Feta cheese
  • Salad dressing of choice
  • Cooking Spray

Instructions:

Take a piece of foil about 18" long and spray it with Pam. Lay out one person's portion of filets on the foil. Cover the filet with diced plum tomatoes and diced red onions. Crumble some feta cheese over that. Pour some salad dressing (e.g. prefer Paul Newman's Roasted Garlic Parmesan) over the filets. Fold the foil to make a sealed bag. Repeat for each person's serving. Place on a medium hot grill for 10 minutes. Serve with a crisp California chardonnay or a French white burgundy. Bon Appetite!
