Lemon Broiled Trout

Ingredients:

  • Skinned, headless rainbow trout
  • Vegetable, canola, or peanut oil
  • 1 whole lemon
  • Butter or margarine
  • Salt and pepper

Instructions:

Cover a cookie sheet with aluminum and place a small baking rack on it. Oil the baking rack to prevent sticking. Place trout on rack and salt and pepper as desired. Brush trout with melted butter and squeeze lemon juice across each generously. Bake at 350 for 10-12 minutes. Adjust oven temperature to broil (550) and broil for about 1 minute (until golden brown).
